			<content:encoded><![CDATA[<p>I&#8217;m not usually a fan of  sweet with meat, but this is a sweet and savory meal that I will definitely be making again. So I had to share. <h2>Ingredients</h2>
<p>SALSA:</p>
<ul>
<li>3  cups  diced peeled peaches</li>
<li>1/4  cup  dried cranberries, chopped</li>
<li>1/4  cup  fresh orange juice</li>
<li>3  tablespoons  minced shallots</li>
<li>2  tablespoons  chopped fresh cilantro</li>
<li>1  tablespoon  brown sugar</li>
<li>1  tablespoon  fresh lime juice</li>
<li>1/4  teaspoon  ground cumin</li>
<li>1/8  teaspoon  ground red pepper</li>
</ul>
<p><span class="vrsmbk"><span class="allCaps">REMAINING INGREDIENTS:</span></span></p>
<ul>
<li>9  (1 1/2-ounce) slices 33%-less-sodium smoked ham</li>
<li>Cilantro sprigs (optional)</li>
</ul>

<h2>Preparation</h2>
<p>To prepare salsa, combine the first 9 ingredients in a bowl, and toss gently. Cover and chill for 1 hour. (I was in a rush so I just put it in the freezer for 10 minutes&#8230;still good)</p>
<p>Make Cornbread.</p>
<p>Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add ham to pan, and sauté 1 minute on each side or until lightly browned. Remove from heat; keep warm.</p>
<p>Cut shortcake pieces in half horizontally. Place 1 bottom half on each of 9 plates; top each serving with 1 tablespoon salsa, 1 ham slice, and top half of shortcake. Top each serving with 2 tablespoons salsa. Garnish with cilantro sprigs, if desired.</p></div>

			<content:encoded><![CDATA[<p>I love to cook. Anyone who knows me well can tell you that. They can also tell you that prior to a year and a half ago, I would have sworn I would never cook but now I love it.</p>
<p>So, I am going to start posting some of my favorite recipes on random occasions. We&#8217;ll start with one that EVERYONE seems to love and that I have perfected over time. My famous Turkey Chili. It&#8217;s only about 3-4 grams of fat (depending on the amount of and type of oil you use), super easy, and it is DELICIOUS! I ate this so much when I was pregnant, even though I had major heartburn. It was just too good!</p>

<p>What You Need:</p>
<p>1 &#8211; Pound Ground Turkey (Chicken is fine also)<br />1 &#8211; Small Onion (diced)<br />1 &#8211; 14.5 Can of Pinto Beans (rinsed and drained)<br />1 &#8211; 14.5 Can of Black Beans (rinsed and drained)<br />2 &#8211; 14.5 Cans of Diced Tomatoes<br />1 &#8211; 10 oz can of Chilies (with tomatoes)<br />1 cup of Chicken Broth<br />2 tablespoons of Garlic<br />2 tablespoons of Chili Powder<br />1 teaspoon of Oregano<br />1 teaspoon of Cumin<br />1 teaspoon of Ground Mustard<br />1 teaspoon of Cayenne Pepper<br />Fresh Chopped Cilantro to taste<br />Fresh Chopped Green Onions (about 3) to taste</p>
<p>Start by sauteeing the onions in a little bit of oil (I use extra virgin olive oil) until slightly transparent. Next brown the ground turkey with the onions. After the turkey is browned, add the rest of the ingredients and simmer for at least an hour. Enjoy!!</p>
<p>Mia&#8217;s secrets: I LOVE Nacho Cheese Doritos in my chili! It totally beats any cracker&#8217;s butt! Oh, and fresh Cilantro is what really makes this chili rock!</p>
